This recipe was born out of one of those Tuesday evenings when I was staring into the fridge, wondering how to make dinner magic happen with what I had on hand. I grabbed the salmon I’d been meaning to cook, some ginger that was about to go bad, and a bottle of sesame oil that had been collecting dust. Twenty minutes later, my family was asking me to make this exact dish every week. Sometimes the best recipes come from happy accidents in your own kitchen.
Ingredients
- 4 salmon fillets (6 oz each), skin removed
- 2 tablespoons avocado oil
- 3 tablespoons coconut aminos
- 2 tablespoons sesame oil
- 2 tablespoons raw honey
- 1 tablespoon fresh lime juice
- 2 tablespoons fresh ginger, minced
- 4 garlic cloves, minced
- 2 green onions, thinly sliced
- 1 tablespoon sesame seeds
- 1/4 teaspoon red pepper flakes (optional)
- Steamed brown rice for serving
Instructions
- Prep the sauce: In a small bowl, whisk together coconut aminos, sesame oil, honey, lime juice, minced ginger, and garlic. Set aside.
- Heat the skillet: Heat avocado oil in a large skillet over medium-high heat until shimmering but not smoking.
- Season the salmon: Pat salmon fillets dry and season both sides with salt and pepper.
- Sear the salmon: Place salmon in the hot skillet and cook for 4-5 minutes without moving them, until golden brown.
- Flip and glaze: Flip salmon carefully and immediately pour the sauce around the fish. Cook for 3-4 minutes more until salmon flakes easily.
- Garnish and serve: Sprinkle with green onions, sesame seeds, and red pepper flakes. Serve over steamed brown rice with extra sauce from the pan.
Tips
- Don’t move the salmon: Let it develop that golden crust before flipping – this prevents sticking and gives amazing texture.
- Fresh ginger matters: Use a microplane to grate it super fine so every bite has that warm, spicy kick.
- Sauce thickness: If you like a thicker glaze, let it bubble for an extra minute after adding to the pan.
- Make it a meal: Add steamed broccoli or snap peas to the skillet in the last 2 minutes for a complete dinner.
