I never thought I’d get excited about cabbage until I figured out this salad. My wife started packing it for my lunch, and honestly, I looked forward to it more than anything else in my meal prep container. The secret is the citrus dressing — no vinegar, just fresh lime and orange juice that makes everything bright and addictive. It stays crunchy for days in the fridge, which means Sunday prep sets me up for the whole week. Now my coworkers keep asking what smells so good.

Ingredients

For the Salad

  • 4 cups green cabbage, thinly shredded
  • 2 cups purple cabbage, thinly shredded
  • 2 medium carrots, julienned or grated
  • 4 scallions, thinly sliced (white and green parts)
  • 1/4 cup fresh cilantro, roughly chopped
  • 2 tablespoons sesame seeds

For the Citrus Dressing

  • Juice of 2 limes (about 1/4 cup)
  • Juice of 1 orange (about 1/4 cup)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prep the vegetables: Thinly shred both cabbages using a sharp knife or mandoline. The thinner the better — it makes the salad more tender and helps the dressing coat everything evenly. Place in a large mixing bowl.
  2. Add the extras: Toss in the julienned carrots, sliced scallions, and fresh cilantro. Give everything a good mix to combine.
  3. Make the dressing: In a small bowl or jar, whisk together the lime juice, orange juice, olive oil, honey, minced garlic, salt, pepper, and red pepper flakes if using.
  4. Dress the salad: Pour the dressing over the cabbage mixture and toss thoroughly, using your hands or tongs to make sure every strand is coated.
  5. Let it marinate: For the best flavor, let the salad sit for at least 15 minutes before serving. This allows the cabbage to soften slightly and absorb the dressing.
  6. Finish and serve: Sprinkle sesame seeds on top just before serving. Taste and adjust salt or lime as needed.

Tips

  • This salad actually gets better after a few hours — the flavors meld and the cabbage softens to the perfect texture while staying crunchy.
  • Store in an airtight container in the fridge for up to 5 days. Add the sesame seeds fresh when serving so they stay crunchy.
  • For extra protein, top with grilled chicken, shrimp, or sliced avocado.
  • No mandoline? Cut the cabbage in half, then slice as thinly as you can with a sharp chef’s knife.
  • Swap cilantro for fresh mint or Thai basil for a different flavor profile.
  • Add sliced mango or mandarin orange segments for a sweeter, more tropical version.

Tangy, crunchy, colorful. This cabbage salad is criminally underrated. Made it twice this week.
