Last summer I spent a long weekend at my buddy’s lake house, and by day three of burgers and cold beers, my body was basically begging for a reset. I grabbed a watermelon from a roadside stand on the way home, threw it in the blender with whatever I had left in the fridge — some mint, a lime, a knob of ginger — and what came out was this ridiculously refreshing pink juice that made me feel human again. Now it’s my go-to whenever I need a quick cleanse that actually tastes like something I want to drink.

Ingredients

  • 4 cups seedless watermelon, cubed (about half a small watermelon)
  • 1/2 cup fresh mint leaves, loosely packed
  • Juice of 2 limes (about 3 tablespoons)
  • 1-inch piece fresh ginger, peeled
  • 1/2 cup filtered water or coconut water
  • 1 tablespoon raw honey (optional, for a touch of sweetness)
  • Pinch of sea salt

Instructions

  1. Blend the base: Add the cubed watermelon, fresh mint leaves, lime juice, peeled ginger, and filtered water to a high-speed blender. Blend on high for 45–60 seconds until completely smooth and no chunks remain.
  2. Strain for smoothness: Place a fine-mesh strainer or nut milk bag over a large pitcher. Pour the blended mixture through, pressing with a spoon or squeezing the bag to extract every drop of juice. Discard the pulp.
  3. Season and sweeten: Stir in the raw honey (if using) and a pinch of sea salt. The salt brings out the watermelon’s natural sweetness. Taste and adjust lime or honey to your liking.
  4. Chill and serve: Pour over ice into tall glasses. Garnish with a sprig of fresh mint and a thin lime wheel. Drink immediately for the best flavor and maximum nutrients.

Tips

  • Use the ripest watermelon you can find — the deeper the red, the sweeter and more nutrient-dense it is. You shouldn’t need any sweetener at all if the melon is perfectly ripe.
  • Freeze watermelon cubes ahead of time for a slushy version that skips the ice (and doesn’t get watered down).
  • Add a pinch of cayenne pepper for an extra metabolism kick and a subtle heat that pairs beautifully with the mint.
  • This juice is best consumed fresh but will keep in a sealed glass jar in the fridge for up to 24 hours. Give it a good shake before drinking.
