I started making this smoothie every morning after a two-week surf trip in Costa Rica, where the local juice stands blended fresh pineapple with ginger and a squeeze of lime right in front of you. Something about that combination just wakes up your whole body — it’s bright, zingy, and makes you feel like you’re actually doing something good for yourself without choking down a kale punishment shake. Now it’s the first thing I reach for after a morning run.
aka The Costa Rica Wake-Up Call
Ingredients
- 2 cups fresh pineapple chunks (about half a medium pineapple), frozen for best texture
- 1 medium banana, peeled and frozen
- 1-inch piece fresh ginger, peeled
- ½ teaspoon ground turmeric (or 1-inch piece fresh turmeric, peeled)
- 1 cup coconut water
- ½ cup filtered water or more coconut water
- Juice of 1 lime (about 2 tablespoons)
- 1 tablespoon raw honey (optional, omit for vegan)
- Small pinch of black pepper (helps absorb turmeric)
- Fresh mint leaves, for garnish
Instructions
- Add liquids first: Pour the coconut water and filtered water into your blender. This helps the blades spin smoothly and prevents air pockets.
- Add the produce: Drop in the frozen pineapple chunks, frozen banana, peeled ginger, turmeric, lime juice, honey if using, and black pepper.
- Blend until smooth: Start on low and increase to high speed. Blend for 45-60 seconds until completely smooth and frothy. The color should be a vibrant golden yellow. If it’s too thick, add water 1 tablespoon at a time until you reach your preferred consistency.
- Taste and adjust: Give it a taste — add more lime for tang, more honey for sweetness, or more ginger if you want extra kick.
- Serve immediately: Pour into tall glasses and garnish with a pineapple wedge and fresh mint. Best enjoyed right away while it’s cold and frothy.
Tips
- Freeze your pineapple and banana ahead of time for the thickest, creamiest texture — no ice needed.
- Fresh ginger varies in heat. Start with a 1-inch piece and add more to taste if you like it spicy.
- Add a handful of fresh spinach for an extra greens boost — you won’t taste it at all behind the pineapple.
- For a protein boost, blend in 1 tablespoon of hemp seeds or a scoop of your favorite plant-based protein powder.
