- 2 tablespoons avocado oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon oregano
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- 2 tablespoons coconut aminos
- 1 tablespoon fresh lime juice
- ¼ cup vegetable broth (corn-free)
Bright Green Avocado-Lime Crema
- 1 ripe avocado
- 3 tablespoons fresh lime juice
- 2 tablespoons water
- ¼ teaspoon sea salt
- 2 tablespoons fresh cilantro leaves
For Serving
- 8 Siete grain-free tortillas (soft cassava flour tortillas work perfectly, or use their hard taco shells for extra crunch)
- ½ red onion, finely diced
- 1 cup shredded purple cabbage
- Fresh cilantro leaves
- Lime wedges
- Hot sauce of choice (ensure corn-free)
Instructions
- Prep the jackfruit: If using Upton’s Naturals shredded jackfruit, simply open the packages and it’s ready to use. If using canned jackfruit, drain and rinse thoroughly, then use your hands or a fork to shred it into pulled meat-like strands. Remove any tough core pieces — you want just the stringy, tender parts.
- Sauté the aromatics: Heat avocado oil in a large skillet over medium heat. Add the diced onion and cook for 5 minutes until softened. Add garlic and cook for another minute until fragrant.
- Season the jackfruit: Add the shredded jackfruit to the pan along with chili powder, smoked paprika, cumin, oregano, salt, and pepper. Stir to coat everything evenly with the spices.
- Braise: Add coconut aminos, lime juice, and vegetable broth. Let it simmer for 8-10 minutes, stirring occasionally, until most of the liquid has evaporated and the jackfruit has absorbed all the flavors.
- Make the bright green crema: While the jackfruit cooks, blend the avocado, lime juice, water, salt, and cilantro until smooth and bright green. The mixture should be pourable but thick. Adjust consistency with more water if needed.
- Warm the Siete tortillas: If using soft Siete tortillas, warm them in a dry pan for 30 seconds per side until pliable and slightly toasted. If using Siete hard taco shells, you can use them straight from the package.
- Assemble: Spoon the seasoned jackfruit into the Siete tortillas. Top with a generous drizzle of the bright green avocado crema, diced red onion, shredded cabbage, and fresh cilantro. Serve with lime wedges.
