There’s something about a cold February morning in Colorado that makes you crave something green, alive, and full of intention. I created The Emerald Revival Bowl after a week of heavy comfort food left me feeling sluggish — you know that feeling when your body is practically begging for a reset? This bowl is my answer. It’s thick, creamy, and loaded with detox-friendly ingredients like spinach, ginger, and lemon that leave you feeling lighter within minutes. I make this almost every Monday morning now — it’s become my weekly ritual for starting fresh. The avocado gives it that dreamy, ice-cream-like texture without any dairy, and the toppings add the crunch factor that makes it feel like a real meal, not just a drink in a bowl.

Ingredients

  • 2 cups fresh baby spinach, packed
  • 1 medium frozen banana, sliced
  • ½ ripe avocado
  • ½ cup frozen mango chunks
  • 1 tablespoon fresh ginger, grated
  • Juice of 1 lemon
  • ¾ cup coconut water
  • 1 tablespoon raw honey
  • 1 tablespoon hemp seeds
  • 1 tablespoon chia seeds
  • ¼ cup fresh blueberries
  • 1 kiwi, sliced
  • 1 tablespoon unsweetened shredded coconut
  • Pinch of bee pollen (optional)

Instructions

  1. Blend the base: Add spinach, frozen banana, avocado, frozen mango, grated ginger, lemon juice, coconut water, and raw honey to a high-speed blender. Blend on high for 45–60 seconds until thick and creamy. You want this thicker than a regular smoothie — add a splash more coconut water only if needed.
  2. Pour and smooth: Transfer the blended mixture into a wide bowl. Use the back of a spoon to spread it evenly and create a smooth surface for your toppings.
  3. Add the toppings: Arrange blueberries, kiwi slices, hemp seeds, chia seeds, shredded coconut, and bee pollen in rows or sections across the top of the bowl.
  4. Serve immediately: Smoothie bowls are best enjoyed right away while the base is still thick and frosty. Grab a spoon and dig in.

Tips

  • For an extra detox boost, add ½ teaspoon of spirulina or a scoop of your favorite greens powder to the blender.
  • Make sure your banana is frozen solid — this is the key to that thick, scoopable texture.
  • Swap mango for frozen pineapple if you prefer a more tropical vibe.
  • If you’re meal prepping, portion out the spinach, banana, mango, and ginger into freezer bags so you can blend and go on busy mornings.
