I first made this agua fresca on one of those sticky summer afternoons where even the thought of turning on a stove made me want to melt into the couch. I had a gorgeous English cucumber from the farmers market, a bunch of mint that was practically taking over my windowsill herb garden, and about five minutes before my yoga class. I threw everything into the blender, took one sip, and honestly — it tasted like a deep breath of cool air. Now it’s my go-to after a hot yoga session, first thing on a warm morning, or anytime I need to hit the reset button. My friends call it liquid meditation, and I think they’re onto something.

Ingredients

  • 2 large English cucumbers (about 1 lb total), peeled and roughly chopped
  • 1/3 cup fresh mint leaves, loosely packed (about 15-20 leaves)
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1-2 tablespoons raw honey or pure maple syrup, to taste
  • 3 cups filtered water
  • Ice, for serving
  • Optional: pinch of sea salt (enhances the flavor beautifully)

Instructions

  1. Blend it up: Add the chopped cucumber, mint leaves, lime juice, honey (or maple syrup), and filtered water to a high-speed blender. Blend on high for about 60 seconds until completely smooth and frothy.
  2. Strain for smoothness: Pour the mixture through a fine-mesh strainer or nut milk bag into a large pitcher, pressing with a spoon to extract all the liquid. Discard the pulp (or save it for a face mask — seriously, your skin will thank you).
  3. Taste and adjust: Give it a taste. Want it sweeter? Add a touch more honey. More tart? Squeeze in extra lime. A tiny pinch of sea salt rounds everything out.
  4. Serve cold: Fill glasses with ice and pour the agua fresca over the top. Garnish with thin cucumber slices and a sprig of fresh mint.

Tips

  • English cucumbers work best — they have fewer seeds and a milder flavor than regular cucumbers. No need to seed them.
  • Make it ahead: This keeps beautifully in the fridge for up to 48 hours. Just give it a good stir before serving as it will naturally separate.
  • Sparkling version: Replace half the water with sparkling mineral water after straining for a fizzy twist. Add the sparkling water right before serving.
  • Freeze into ice cubes for a fun way to keep your regular water cool and infused throughout the day.
  • Skip the straining if you prefer more fiber and a thicker, smoothie-like texture.
