aka Tropical Sunshine in a Cup

I fell in love with this dessert during a particularly stressful week when I needed something sweet but didn’t have the energy to turn on the oven. The combination of creamy coconut milk, bright lime, and those amazing chia seeds that create the perfect pudding texture felt like a little vacation in a cup. Now it’s my go-to when friends come over because it looks fancy but literally takes five minutes to make. The best part? It gets better as it sits, so you can make it ahead and forget about it.

Ingredients

  • 1 can (14 oz) full-fat coconut milk
  • 1/4 cup chia seeds
  • 3 tablespoons pure maple syrup
  • Zest of 2 limes
  • 3 tablespoons fresh lime juice
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1/2 cup toasted coconut flakes
  • Fresh lime zest for garnish
  • Mint leaves for garnish (optional)

Instructions

  1. Mix the base: In a large bowl, whisk together coconut milk, maple syrup, lime zest, lime juice, vanilla, and salt until smooth and well combined.
  2. Add chia seeds: Sprinkle chia seeds over the mixture and whisk vigorously for 1-2 minutes to prevent clumping. Let sit for 5 minutes, then whisk again.
  3. First set: Refrigerate for at least 2 hours or until mixture has thickened to pudding consistency. Stir once halfway through if possible.
  4. Prepare serving cups: Divide pudding between 6 serving glasses or mason jars. Top each with toasted coconut flakes.
  5. Garnish and serve: Just before serving, garnish with fresh lime zest and mint leaves if using. Serve chilled.

Tips

  • Use a whisk, not a spoon, when mixing in chia seeds to prevent clumping.
  • For ultra-smooth pudding, blend everything in a high-speed blender for 30 seconds.
  • These keep perfectly in the fridge for up to 4 days — perfect for meal prep!
  • Try layering with fresh mango or berries for a beautiful parfait effect.

Super easy dessert that actually tastes indulgent! The coconut and lime combo is refreshing and the chia seeds give it a nice texture. Made these for a dinner party and everyone was impressed they were healthy.
