Grilled Lemon Herb Chicken Save

This is the chicken recipe I make when I want something healthy but absolutely delicious. The lemon and herb marinade keeps the chicken incredibly moist, and it takes just minutes to prep. I usually double the batch for easy lunches throughout the week.

Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tbsp olive oil
  • Juice and zest of 2 lemons
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Marinate: Whisk olive oil, lemon juice, zest, garlic, herbs, salt and pepper. Add chicken, coat well. Marinate 30 min to 4 hours.
  2. Grill: Preheat grill to medium-high. Grill chicken 6-7 minutes per side until internal temp reaches 165°F.
  3. Rest: Let chicken rest 5 minutes before slicing. Serve with extra lemon wedges.

Tips

  • Pound chicken to even thickness for even cooking.
  • Works great on a grill pan if you do not have outdoor grill.

Simple but so flavorful. The lemon herb marinade really penetrates the chicken if you let it sit for a few hours. Grilled it on my cast iron since it was raining — still came out great.
