Nothing says weekend to me like a rack of ribs. I spent years trying to nail that fall-off-the-bone texture without a smoker, and after countless experiments (and a lot of happy taste-testers), I finally cracked the code. These oven-baked ribs have become legendary at our neighborhood cookouts — my buddy Mike literally offered to mow my lawn for the recipe.

Ingredients

Dry Rub

  • 2 racks baby back ribs (about 4 lbs)
  • 3 tbsp brown sugar
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne

BBQ Glaze

  • 1 cup BBQ sauce
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar

Instructions

  1. Prep ribs: Remove membrane from back of ribs. Pat dry.
  2. Season: Mix all rub ingredients, coat ribs generously on both sides.
  3. Wrap: Wrap each rack tightly in foil, place on baking sheet.
  4. Bake low & slow: 275°F for 2.5-3 hours until tender.
  5. Glaze: Unwrap, brush generously with BBQ glaze mixture.
  6. Broil: Broil 3-5 minutes until caramelized. Watch carefully!
  7. Rest & serve: Let rest 5 min, cut between bones.

Fall-off-the-bone is not an exaggeration. These ribs were absolutely spectacular — best I've ever made.

Followed this recipe to a T and the ribs literally fell off the bone. The bark was beautiful and the meat was so tender. Smoked them for about 5 hours and they were absolutely perfect.
