There’s this spot up near Breckenridge where the morning air hits different — crisp, clean, almost electric. I started making this tonic last spring after a particularly long winter of comfort food and not enough movement. I needed something that would wake up my system without feeling like punishment, something that actually tasted good enough to look forward to. This green tonic became my daily reset, and honestly, after a week of drinking it every morning, I felt lighter, clearer, and more energized than I had in months. Now it’s the first thing I make when anyone tells me they want to start eating cleaner.

aka The Rocky Mountain Reset

Ingredients

  • 1 large English cucumber, roughly chopped (about 2 cups)
  • 1 medium green apple, cored and chopped (such as Granny Smith)
  • 1 cup fresh flat-leaf parsley, loosely packed (stems included)
  • 1-inch piece fresh ginger, peeled
  • 1 large lemon, juiced (about 3 tablespoons)
  • 1 tablespoon raw honey
  • 1 cup pure coconut water (no added sugar)
  • ½ cup filtered water
  • Small pinch of cayenne pepper
  • 4–6 ice cubes

Instructions

  1. Prep your ingredients: Wash the cucumber and parsley thoroughly. Roughly chop the cucumber and green apple (no need to peel the cucumber). Peel the ginger and squeeze the lemon.
  2. Blend: Add the coconut water, filtered water, cucumber, green apple, parsley, ginger, lemon juice, raw honey, and cayenne to a high-speed blender. Blend on high for 60–90 seconds until completely smooth.
  3. Strain (optional): For a silky-smooth tonic, pour through a fine-mesh strainer or nut milk bag into a pitcher, pressing out all the liquid. For more fiber, skip this step and enjoy it as-is.
  4. Serve: Pour over ice cubes into two glasses. Garnish with a thin cucumber round or parsley sprig if you’re feeling fancy. Drink immediately for maximum freshness and nutrient benefit.

Tips

  • Use a Granny Smith apple for the best tart-sweet balance — sweeter apples like Fuji will make it taste more like a smoothie than a tonic.
  • If you don’t have fresh ginger, ½ teaspoon of ground ginger works in a pinch, but fresh is noticeably better.
  • Make it ahead by blending everything except the ice and storing in a sealed mason jar in the fridge for up to 24 hours. Give it a good shake before drinking.
  • For an extra detox boost, add ½ teaspoon of spirulina powder or a small handful of fresh mint leaves.
  • The cayenne is subtle here — it adds a gentle warming effect that supports circulation. Start with a tiny pinch and adjust to your heat preference.
