- 2 large English cucumbers, roughly chopped
- 4 stalks celery, trimmed and chopped
- 2 medium green apples (such as Granny Smith), cored and quartered
- 2 cups packed fresh kale leaves, stems removed
- 1 cup packed baby spinach
- 1 (2-inch) piece fresh ginger, peeled
- Juice of 1 lime (about 2 tablespoons)
- 1 cup cold filtered water
Instructions
- Prep the produce: Wash all fruits and vegetables thoroughly. Roughly chop the cucumbers and celery into 2-inch pieces. Core and quarter the apples. Peel the ginger.
- Blend it up: Add the cucumber and water to a high-powered blender first (this helps create a liquid base). Then add the celery, apples, kale, spinach, and ginger. Blend on high for 2 to 3 minutes until completely smooth.
- Strain the juice: Place a fine-mesh strainer or nut milk bag over a large bowl or pitcher. Pour the blended mixture through, pressing firmly with the back of a spoon or squeezing the bag to extract as much liquid as possible. Discard the pulp or save it for smoothies.
- Add the citrus: Stir in the fresh lime juice and mix well. This brightens all the flavors and helps prevent oxidation.
- Serve and enjoy: Pour over ice into tall glasses and serve immediately for the freshest flavor. If storing, transfer to an airtight glass jar and refrigerate for up to 24 hours. Give it a good shake before drinking.
