Finding good gluten-free chicken tenders was a quest. Store-bought ones were always soggy or weird-tasting. These are crispy, flavorful, and my kids cannot tell the difference from the regular kind.
Ingredients
- 1.5 lbs chicken breast, cut into strips
- 1 cup gluten-free all-purpose flour
- 2 eggs, beaten
- 1.5 cups gluten-free panko or Chickpea Crumbs from Just About Foods
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper
- Cooking spray
Instructions
- Set up station: Three shallow bowls — flour, beaten eggs, crumbs mixed with seasonings.
- Bread chicken: Dredge each strip in flour, dip in egg, coat in crumbs. Press firmly.
- Bake: Place on lined baking sheet, spray with oil. Bake at 425°F for 20 minutes, flipping halfway.
Tips
- Let chicken come to room temperature before breading.
- Freeze uncooked tenders for quick weeknight dinners.
