Finding good gluten-free chicken tenders was a quest. Store-bought ones were always soggy or weird-tasting. These are crispy, flavorful, and my kids cannot tell the difference from the regular kind.

Ingredients

  • 1.5 lbs chicken breast, cut into strips
  • 1 cup gluten-free all-purpose flour
  • 2 eggs, beaten
  • 1.5 cups gluten-free panko or Chickpea Crumbs from Just About Foods
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper
  • Cooking spray

Instructions

  1. Set up station: Three shallow bowls — flour, beaten eggs, crumbs mixed with seasonings.
  2. Bread chicken: Dredge each strip in flour, dip in egg, coat in crumbs. Press firmly.
  3. Bake: Place on lined baking sheet, spray with oil. Bake at 425°F for 20 minutes, flipping halfway.

Tips

  • Let chicken come to room temperature before breading.
  • Freeze uncooked tenders for quick weeknight dinners.
