Three years ago when I was first diagnosed with celiac, I thought my taco nights were over. Regular breaded cauliflower just fell apart, and most gluten-free coatings tasted like cardboard. Then I discovered this coconut coating technique that gets so crispy in the air fryer, even my gluten-eating friends prefer these to traditional fish tacos. The coconut adds this subtle sweetness that pairs perfectly with tangy lime crema.

Ingredients

  • 1 large head cauliflower, cut into bite-sized florets
  • ½ cup coconut flour
  • ½ cup unsweetened shredded coconut
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 2 large eggs, beaten
  • 2 tbsp coconut oil, melted
  • 8 small corn tortillas (certified gluten-free)
  • 2 cups shredded purple cabbage
  • 1 avocado, sliced
  • Lime wedges for serving

For the Lime Crema:

  • ½ cup plain Greek yogurt (or dairy-free coconut yogurt)
  • Juice of 1 lime
  • 1 tsp lime zest
  • 1 clove garlic, minced
  • Pinch of sea salt

Instructions

  1. Preheat air fryer: Set air fryer to 400°F (200°C). Line basket with parchment paper if desired.
  2. Make coating: In a shallow dish, whisk together coconut flour, shredded coconut, paprika, cumin, garlic powder, salt, and pepper.
  3. Prep cauliflower: In another dish, whisk eggs with melted coconut oil. Dip each cauliflower floret in egg mixture, then roll in coconut coating mixture, pressing gently to adhere.
  4. Air fry: Place coated cauliflower in air fryer basket in single layer (work in batches if needed). Cook 12-15 minutes, shaking basket halfway through, until golden brown and crispy.
  5. Make crema: While cauliflower cooks, whisk together all lime crema ingredients in a small bowl. Set aside.
  6. Warm tortillas: Heat tortillas in a dry skillet for 30 seconds per side or wrap in damp paper towel and microwave 20 seconds.
  7. Assemble tacos: Fill warm tortillas with crispy cauliflower, shredded cabbage, avocado slices, and a drizzle of lime crema. Serve with lime wedges.

Tips

  • Make sure cauliflower is completely dry before coating for maximum crispiness
  • Don’t overcrowd the air fryer – crispy coating needs airflow
  • Double-check that your corn tortillas are certified gluten-free
  • The coconut coating works great on other vegetables too – try it with broccoli or Brussels sprouts
