Three years ago when I was first diagnosed with celiac, I thought my taco nights were over. Regular breaded cauliflower just fell apart, and most gluten-free coatings tasted like cardboard. Then I discovered this coconut coating technique that gets so crispy in the air fryer, even my gluten-eating friends prefer these to traditional fish tacos. The coconut adds this subtle sweetness that pairs perfectly with tangy lime crema.
Ingredients
- 1 large head cauliflower, cut into bite-sized florets
- ½ cup coconut flour
- ½ cup unsweetened shredded coconut
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp garlic powder
- ½ tsp sea salt
- ¼ tsp black pepper
- 2 large eggs, beaten
- 2 tbsp coconut oil, melted
- 8 small corn tortillas (certified gluten-free)
- 2 cups shredded purple cabbage
- 1 avocado, sliced
- Lime wedges for serving
For the Lime Crema:
- ½ cup plain Greek yogurt (or dairy-free coconut yogurt)
- Juice of 1 lime
- 1 tsp lime zest
- 1 clove garlic, minced
- Pinch of sea salt
Instructions
- Preheat air fryer: Set air fryer to 400°F (200°C). Line basket with parchment paper if desired.
- Make coating: In a shallow dish, whisk together coconut flour, shredded coconut, paprika, cumin, garlic powder, salt, and pepper.
- Prep cauliflower: In another dish, whisk eggs with melted coconut oil. Dip each cauliflower floret in egg mixture, then roll in coconut coating mixture, pressing gently to adhere.
- Air fry: Place coated cauliflower in air fryer basket in single layer (work in batches if needed). Cook 12-15 minutes, shaking basket halfway through, until golden brown and crispy.
- Make crema: While cauliflower cooks, whisk together all lime crema ingredients in a small bowl. Set aside.
- Warm tortillas: Heat tortillas in a dry skillet for 30 seconds per side or wrap in damp paper towel and microwave 20 seconds.
- Assemble tacos: Fill warm tortillas with crispy cauliflower, shredded cabbage, avocado slices, and a drizzle of lime crema. Serve with lime wedges.
Tips
- Make sure cauliflower is completely dry before coating for maximum crispiness
- Don’t overcrowd the air fryer – crispy coating needs airflow
- Double-check that your corn tortillas are certified gluten-free
- The coconut coating works great on other vegetables too – try it with broccoli or Brussels sprouts
