This stroganoff was born out of pure desperation on a rainy Tuesday when my kids were melting down and I needed comfort food fast. I had a bag of mixed mushrooms that needed using up and some leftover pasta—thirty minutes later, my kitchen smelled like heaven and my family was silent at the dinner table (the highest compliment). Now it’s our go-to when we need a warm hug in bowl form, and nobody even misses the beef!

Ingredients

  • 12 oz wide egg noodles or pappardelle
  • 3 tablespoons avocado oil
  • 1 lb mixed mushrooms (cremini, shiitake, oyster), sliced
  • 1 medium onion, thinly sliced
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 cup vegetable broth
  • 1 cup sour cream (or Greek yogurt)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • Sea salt and black pepper to taste
  • 2 tablespoons fresh chives for garnish

Instructions

  1. Start the Pasta: Bring a large pot of salted water to boil. Cook noodles according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Sear the Mushrooms: Heat avocado oil in a large skillet over medium-high heat. Add mushrooms in a single layer, don’t stir for 4-5 minutes until golden. Season with salt and pepper.
  3. Add Aromatics: Add onion to skillet, cook 3-4 minutes until softened. Stir in garlic and thyme, cook 1 minute until fragrant.
  4. Make the Sauce: Sprinkle flour over mushrooms, stir to coat. Slowly pour in vegetable broth while stirring. Simmer 2-3 minutes until slightly thickened.
  5. Finish with Cream: Remove from heat. Stir in sour cream, Dijon mustard, and fresh dill. If too thick, add pasta water gradually.
  6. Toss and Serve: Add cooked noodles to skillet, toss to coat. Taste and adjust seasoning. Serve immediately topped with fresh parsley and chives.

Tips

  • Don’t crowd the mushrooms – they’ll steam instead of sear
  • Mix of mushroom types gives the best flavor complexity
  • Add sour cream off the heat to prevent curdling
  • Fresh herbs make all the difference – don’t skip them!
