- 2 tablespoons sesame seeds
- 2 green onions, thinly sliced
For the Sesame Ginger Dressing
- 3 tablespoons coconut aminos
- 2 tablespoons tahini
- 1 tablespoon toasted sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 teaspoon fresh ginger, grated
- 1 clove garlic, minced
Instructions
- Massage the kale: Place chopped kale in a large bowl. Add a pinch of salt and 1 teaspoon of sesame oil. Massage with your hands for 2-3 minutes until the kale softens and turns bright green.
- Make the dressing: Whisk together all dressing ingredients in a small bowl until smooth and creamy. Add a splash of water if too thick.
- Toast the almonds: In a dry skillet over medium heat, toast the sliced almonds for 2-3 minutes, stirring frequently until golden. Set aside to cool.
- Assemble the salad: Add shredded cabbage and edamame to the massaged kale. Pour the dressing over and toss to coat evenly.
- Top and serve: Arrange mandarin segments on top, then sprinkle with toasted almonds, sesame seeds, and green onions. Serve immediately or store in the fridge.
Tips
- Massaging the kale breaks down the tough fibers and removes bitterness. Do not skip this step!
- This salad holds up great for meal prep. Store dressing separately and add just before eating for the crunchiest results.
- Swap edamame for chickpeas or white beans if you prefer.
