My college roommate introduced me to the magic of massaged kale, and it completely changed how I think about salads. Before that, I thought kale was just for smoothies or that bitter stuff people forced themselves to eat. This Asian-inspired version became my go-to meal prep recipe because it actually gets better as it sits in the fridge. Now my coworkers always ask what I am eating because it looks and smells so good.

Ingredients

For the Salad

  • 1 large bunch curly kale, stems removed and leaves chopped
  • 1 cup purple cabbage, thinly shredded
  • 1 cup shelled edamame
  • 2 mandarin oranges, peeled and segmented
  • 1/4 cup sliced almonds, toasted
  • 2 tablespoons sesame seeds
  • 2 green onions, thinly sliced

For the Sesame Ginger Dressing

  • 3 tablespoons coconut aminos
  • 2 tablespoons tahini
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced

Instructions

  1. Massage the kale: Place chopped kale in a large bowl. Add a pinch of salt and 1 teaspoon of sesame oil. Massage with your hands for 2-3 minutes until the kale softens and turns bright green.
  2. Make the dressing: Whisk together all dressing ingredients in a small bowl until smooth and creamy. Add a splash of water if too thick.
  3. Toast the almonds: In a dry skillet over medium heat, toast the sliced almonds for 2-3 minutes, stirring frequently until golden. Set aside to cool.
  4. Assemble the salad: Add shredded cabbage and edamame to the massaged kale. Pour the dressing over and toss to coat evenly.
  5. Top and serve: Arrange mandarin segments on top, then sprinkle with toasted almonds, sesame seeds, and green onions. Serve immediately or store in the fridge.

Tips

  • Massaging the kale breaks down the tough fibers and removes bitterness. Do not skip this step!
  • This salad holds up great for meal prep. Store dressing separately and add just before eating for the crunchiest results.
  • Swap edamame for chickpeas or white beans if you prefer.
  • Add crispy tofu or grilled shrimp for a heartier meal.
