When I took over cooking duties from my wife, stir fry was the first thing I mastered. It’s fast, it’s hard to mess up, and you can clean out the vegetable drawer while you’re at it. This version has become my Thursday night special — it’s quick enough to make after the kids’ soccer practice and everyone actually eats it without complaining.

This easy chicken stir fry is loaded with crisp vegetables and coated in a savory sauce. Perfect for busy weeknights when you want something healthy and delicious fast.

Ingredients

  • 1 lb chicken breast, cubed
  • 2 cups mixed vegetables
  • 3 tbsp coconut aminos
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated

Instructions

1. Cook chicken in hot pan until golden. Set aside.

2. Stir fry vegetables with garlic and ginger for 3 minutes.

3. Add chicken back, pour in coconut aminos and sesame oil. Toss and serve.
