When people ask how I stay keto without feeling deprived, I make them this. Crispy bacon wrapped around juicy chicken stuffed with cream cheese and spinach — it is restaurant-quality and guilt-free.

Ingredients

  • 4 boneless skinless chicken breasts
  • 8 oz cream cheese, softened
  • 2 cups fresh spinach, chopped
  • 4 cloves garlic, minced
  • 8 strips bacon
  • ½ tsp paprika
  • Salt and pepper

Instructions

  1. Make filling: Mix cream cheese, spinach, and garlic. Season with salt and pepper.
  2. Stuff chicken: Cut a pocket in each chicken breast. Stuff with cream cheese mixture. Season outside with paprika, salt, pepper.
  3. Wrap and bake: Wrap each breast with 2 bacon strips. Bake at 400°F for 35-40 minutes until bacon is crispy and chicken reaches 165°F.

Tips

  • Use a meat thermometer — do not overcook.
  • Let rest 5 minutes before slicing to keep juices in.
