Ingredients

For the Smoothie Base:

  • 1 large frozen banana
  • 1 cup frozen mango chunks
  • 2 cups fresh baby spinach
  • ½ cup coconut milk (canned, full-fat)
  • ¼ cup fresh pineapple juice
  • 1 tablespoon raw honey
  • 1 tablespoon lime juice
  • 1 teaspoon fresh ginger, grated

For Toppings:

  • 2 tablespoons unsweetened coconut flakes
  • 1 kiwi, sliced
  • ¼ cup fresh berries
  • 2 tablespoons chopped macadamia nuts
  • 1 tablespoon chia seeds
  • Fresh mint leaves

Instructions

  1. Blend the Base: Add frozen banana, mango, spinach, coconut milk, pineapple juice, honey, lime juice, and grated ginger to a high-speed blender. Blend on high for 60-90 seconds until completely smooth and thick.
  2. Check Consistency: The mixture should be thick enough to hold toppings – thicker than a regular smoothie but still scoopable. Add more coconut milk if too thick, or more frozen fruit if too thin.
  3. Prepare Bowls: Divide smoothie mixture between 2 chilled bowls. Use the back of a spoon to create a smooth, even surface.
  4. Add Toppings: Arrange kiwi slices, berries, coconut flakes, macadamia nuts, and chia seeds in colorful sections on top. Garnish with fresh mint leaves.
  5. Serve Immediately: Enjoy right away with a spoon for the best texture. The smoothie base will start to soften after about 10 minutes.
