Last Tuesday I walked through the door at 6:47 PM, two kids already asking what’s for dinner, and I had exactly zero plan. I opened the fridge, spotted a flank steak and a bag of broccoli crowns, and thought — challenge accepted. Thirteen minutes later we were sitting down to plates of glossy, ginger-spiked beef and broccoli that tasted better than anything I’ve ever ordered from a takeout menu. No mystery oils, no MSG, no regrets. Just real food, real fast.

Ingredients
- 1 lb flank steak, thinly sliced against the grain
- 4 cups broccoli florets
- 2 tablespoons avocado oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons coconut aminos
- 1 tablespoon sesame oil
- 1 tablespoon raw honey
- 1 tablespoon arrowroot starch (or cornstarch)
- 2 tablespoons water
- 1/4 teaspoon red pepper flakes
- Sesame seeds and sliced green onions for garnish
Instructions
- Make the sauce: In a small bowl, whisk together coconut aminos, sesame oil, raw honey, arrowroot starch, and water. Set aside.
- Sear the beef: Heat 1 tablespoon avocado oil in a large skillet or wok over high heat. Add sliced flank steak in a single layer and cook undisturbed for 2 minutes, then flip and cook 1 minute more. Transfer to a plate.
- Cook the broccoli: Add remaining 1 tablespoon avocado oil to the same pan. Toss in broccoli florets and cook for 3-4 minutes until bright green and crisp-tender, stirring occasionally.
- Build the stir-fry: Push broccoli to the edges. Add garlic, ginger, and red pepper flakes to the center and cook for 30 seconds until fragrant. Return beef to the pan.
- Sauce it up: Pour the sauce over everything and toss to coat. Cook for 1-2 minutes until the sauce thickens and glazes the beef and broccoli.
- Serve: Divide among bowls over steamed rice. Garnish with sesame seeds and sliced green onions.
Tips
- Freeze the steak for 20 minutes before slicing — it makes paper-thin cuts effortless.
- Don’t crowd the pan when searing beef. Work in batches if needed for a proper sear instead of steaming.
- Swap broccoli for broccolini or snap peas if you want to mix things up.
- Make it paleo by serving over cauliflower rice instead of white rice.
- Leftovers reheat beautifully in a hot skillet — skip the microwave to keep that sear.
