Last Tuesday I walked through the door at 6:47 PM, two kids already asking what’s for dinner, and I had exactly zero plan. I opened the fridge, spotted a flank steak and a bag of broccoli crowns, and thought — challenge accepted. Thirteen minutes later we were sitting down to plates of glossy, ginger-spiked beef and broccoli that tasted better than anything I’ve ever ordered from a takeout menu. No mystery oils, no MSG, no regrets. Just real food, real fast.

Ingredients

  • 1 lb flank steak, thinly sliced against the grain
  • 4 cups broccoli florets
  • 2 tablespoons avocado oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons coconut aminos
  • 1 tablespoon sesame oil
  • 1 tablespoon raw honey
  • 1 tablespoon arrowroot starch (or cornstarch)
  • 2 tablespoons water
  • 1/4 teaspoon red pepper flakes
  • Sesame seeds and sliced green onions for garnish

Instructions

  1. Make the sauce: In a small bowl, whisk together coconut aminos, sesame oil, raw honey, arrowroot starch, and water. Set aside.
  2. Sear the beef: Heat 1 tablespoon avocado oil in a large skillet or wok over high heat. Add sliced flank steak in a single layer and cook undisturbed for 2 minutes, then flip and cook 1 minute more. Transfer to a plate.
  3. Cook the broccoli: Add remaining 1 tablespoon avocado oil to the same pan. Toss in broccoli florets and cook for 3-4 minutes until bright green and crisp-tender, stirring occasionally.
  4. Build the stir-fry: Push broccoli to the edges. Add garlic, ginger, and red pepper flakes to the center and cook for 30 seconds until fragrant. Return beef to the pan.
  5. Sauce it up: Pour the sauce over everything and toss to coat. Cook for 1-2 minutes until the sauce thickens and glazes the beef and broccoli.
  6. Serve: Divide among bowls over steamed rice. Garnish with sesame seeds and sliced green onions.

Tips

  • Freeze the steak for 20 minutes before slicing — it makes paper-thin cuts effortless.
  • Don’t crowd the pan when searing beef. Work in batches if needed for a proper sear instead of steaming.
  • Swap broccoli for broccolini or snap peas if you want to mix things up.
  • Make it paleo by serving over cauliflower rice instead of white rice.
  • Leftovers reheat beautifully in a hot skillet — skip the microwave to keep that sear.

Really solid weeknight dinner. Had everything on the table in under 20 minutes which is a win with two kids. The sauce is simple but hits all the right notes — next time I might add a little extra garlic though.
